Four Seasons Hotel Atlanta is thrilled to unveil its latest culinary addition, Brasserie Margot, opening in December 2024. Designed to captivate guests with approachable, modern French cuisine and swoon-worthy cocktails, this intimately chic brasserie blends innovative culinary techniques, a charismatic mid-century aesthetic, and exceptional service for unparalleled dining in the heart of Midtown Atlanta.

At the helm of the kitchen is Executive Chef Jon Novak, whose wealth of experience spans globally renowned kitchens, including Michelin-starred destinations and critically acclaimed Tiny Lou’s in Atlanta. At the heart of his approach is working closely with trusted local purveyors and producers to source fresh, seasonal, and distinctive ingredients that shape the menu.
"I like to think I bring a certain color and mix to the menu—a blend of a worldly traveler’s perspective with a deep respect for traditional French cooking. You’ll find dishes that might look classic on paper, but when they arrive, there’s a 360-degree flip—a modern elevation that still holds true to the essence of these traditional specialties," shared Novak. "It’s all about surprising diners in ways they didn’t see coming."
Guests can expect to find classic French staples like steak frites, bouillabaisse, and foie gras, elevated with Novak’s unique perspective and inspired by techniques from the past, reimagined for today’s palate. Complementing Novak’s culinary vision is the artistry of Executive Pastry Chef Eric Snow. Highlights include house-made baguettes made with a green apple starter and served with locally sourced, French-style butter from Banner Butter. Drinks like the Louvre Sour, a true masterpiece in a glass boasting a delicate mosaic of the Mona Lisa, and the smoky Clay Pot Negroni combine visual drama with indelible flavor. The cocktail program is paired with an extensive wine list featuring selections from multi-generational and woman-owned vineyards, with a focus on French and sustainable producers.

The interior of the brasserie, designed by the renowned Smith Hanes Studio, whispers instead of shouts, exuding a sexy, whimsical allure and poised sophistication. Muted tones, warm layered textures, and moody lighting evoke a sense of understated glamour, while subtle design touches—plush banquettes, rich wood accents, a deep color palette, and hints of gold—lend a sense of familiarity, striking the perfect balance between Parisian elegance and Atlanta swagger.
Brasserie Margot will join Four Seasons Hotel Atlanta’s dynamic food and beverage offerings alongside the beloved Bar Margot, a collaboration with acclaimed restaurateur Ford Fry. The bridge between the two venues creates an elegant transition, guiding guests from Bar Margot’s lively, cocktail-driven atmosphere to Brasserie Margot’s inspired interpretation of classic brasserie dining. Together, they offer guests a range of experiences, each with its own personality yet seamlessly connected, inviting them to explore the best of both worlds.
Under the guidance of Mathieu Bruno, Food & Beverage Director and a native of France, and overseen by Hotel Manager Matthew Barber, Brasserie Margot is set to become a culinary gem in Atlanta.
